Banana Pancakes with Mango 

Serves: 4 

Prep: 10 minutes 

Cooking: 10 minutes 

Ingredients

2 small ripe banana 

2 small eggs 

4 tablespoons self raising flour 

425g tinned mango, drained (or frozen mango)  

2 tablespoons coconut flakes, toasted 

Mango Yoplait Yoghurt to serve  

Method

1. Mash banana until smooth.  Whisk in egg and flour.  Let rest for 5 minutes. 

2. Using a non-stick fry pan, spray with oil.  Add 2 tablespoons of batter the warm pan and cook over low heat until golden on both sides.  Repeat with remaining batter. 

3. To serve, divide the pancakes between four plates.  Top with the mango, Yoplait Mango Yoghurt, and sprinkle over coconut flakes.
